Are you familiar with the Chinese New Year? Although I have heard of it, I never really knew what that was until recently. The Chinese New Year celebrates the wish of "good fortune" to all in the year ahead. Many Chinese families gather for an annual reunion dinner. It is also traditional for every family to thoroughly cleanse the house, in order to sweep away any ill-fortune and to make way for good incoming luck. Windows and doors will be decorated with red color paper-cuts and couplets with popular themes of "good fortune" or "happiness", "wealth", and "longevity." Other activities include lighting firecrackers and giving money in red paper envelopes.

Since we're a homeschool family, I think it's important to introduce my children to different cultures and customs. The Chinese New Year starts on February 19th this year, and runs for two weeks! We have learned a little bit about Chinese customs and I thought it would be fun to include an Asian-inspired dinner. We learned a little bit about the festivities, including doing a paper lantern craft. My kiddos learned that 2015 is the year of the Sheep - and we all learned what animal year we were born under! I was born in the year of the Dragon!

One of my family's favorite Asian meals is Chow Mein. I decided to kick it up a notch and make a spicy chicken version and it was an instant hit! We've made it twice in the past two weeks!

I stopped at Walmart to pick up the ingredients for the Spicy Chicken Chow Mein and decided to see if I could find something to go with it. Since some people like Egg Rolls and some people like Spring Rolls, I grabbed a box of each!

Spicy Chicken Chow Mein

Yield: 6 servings

Ingredients
  • ⅓ cup soy sauce
  • 4 cloves garlic, minced
  • 2 tbsp. brown sugar
  • 1 tbsp. freshly grated ginger
  • 1-2 tsp. Sriracha sauce (depending on how spicy you like it)
  • ¼ tsp. white pepper
  • 2 pkg. (6 oz. each) chow mein stir-fry noodles
  • 2 tbsp. olive oil
  • 1 lb. boneless skinless chicken breasts or thighs, cut into thin strips
  • 1 medium onion, diced
  • 3 stalks celery, sliced
  • 3 cups shredded cabbage

Instructions

1. In a small bowl, whisk together soy sauce, garlic, brown sugar, ginger, Sriracha sauce and white pepper. Set aside.

2. Cook chow mein noodles according to package directions and drain.

3. Heat olive oil in a large skillet over medium-high heat. Cook the chicken pieces until no longer pink, stirring occasionally. Add the onion and celery, stirring often, until tender, about 3-4 minutes. Add the cabbage and stir-fry for one minute. Add the drained noodles and the soy sauce mixture. Use tongs to toss and combine until the ingredients are mixed. Serve immediately.
