Brownie recipe, adapted from Food Network:
4 sticks unsalted butter
1 pound plus 12 ounces semisweet chocolate chips
3 tablespoons of unsweetened chocolate
6 large eggs
3 tablespoons instant coffee granules
2 tablespoons pure vanilla extract
2 1/4 cups sugar
1 1/4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
Preheat oven to 350 degrees F.
Butter and flour a 12 x 18 x 1-inch baking sheet.
Melt together the butter,1lbof chocolate chips, and the unsweetened chocolate in a bowl over simmering water.
Allow to cool slightly. In another bowl, stir together the eggs, coffee granules, vanilla, and sugar.
Add the warm chocolate mixture into the egg mixture and let it cool to room temperature.
In a medium bowl, sift together 1 cup of flour, baking powder, and salt. Add to the cooled chocolate mixture.
In another bowl, mix the rest of the flour and the chocolate chips and fold it into the chocolate batter. Pour into the baking sheet.
Bake for 30 minutes, until a toothpick comes out clean.
Let the brownies cool completely.
Making the pops:
-Crumble the brownies
-Add 4 to 5 scoops of your favorite ice cream ( I used vanilla bean) until you get a paste like consistency.
-Place the brownie-ice cream mixture in the freezer until firm
-Scoop the mixture into a baking sheet lined with parchment paper and insert the sticksButter and flour a 12 x 18 x 1-inch baking sheet.

Making the pops:

-Put it back in the freezer to keep the ice cream scoops cool while you make the caramel macchiato topping
Caramel Macchiato topping
1/2 cup of caramel candies
Put the creamer and the caramel together in a bowl and heat in the microwave 30 seconds at the time until the caramels are melted. Stir until the caramel comes together and is nice and smooth
Top your ice cream pops with the caramel topping and enjoy!!
