I don't know about your family, but in the Love Bakes Good Cakes house, we're getting into the "busy" part of the year. I was just telling my bloggy friend, Sheena, the other day that I am still trying to recover from last year's craziness!

Our schedules tend to get a little out of whack with numerous birthdays, football games, holidays, the time change .... and probably a dozen more things I would like to lay blame on. Truthfully, its just "life." It happens. 

I keep an arsenal of easy meal ideas for those crazy days! We try to stay away from fast food (but do give in on a rare occasion) and I don't buy too many convenience foods. Just because things are busy doesn't mean we shouldn't try to eat better. In my opinion, anyways! :)

As many of my regular readers know, my kiddos love breakfast food. As in, they go gaga over it! These Garden Confetti Omelet Cups are a family-favorite weekend breakfast idea. Of course, when you call a recipe "Garden Confetti," it sounds way cooler than "vegetable." I like to make extra omelet cups for the rest of the week so I only have to cook once! Sneaky, sneaky huh?! They reheat well in the microwave and the best part? The kiddos can do it themselves! They're the perfect solution on a busy school morning - or for an after school snack! Not to mention, you can totally switch out the veggies for some of your family's favorite ingredients!

Although I may change up the ingredients a bit, there is one thing I never switch out. I prefer Eggland's Best eggs. They are packed fresher and stay fresher longer than ordinary eggs. By using EB eggs, it's easy for me to sneak in key nutrients - helping my kiddos stay energized, focused and strong!

Garden Confetti Omelet Cups

Yield: (6 servings)

Ingredients
  • 6 Eggland's Best eggs
  • ½ cup milk
  • 2 drops hot sauce, optional
  • ¼ tsp. salt
  • ⅛ tsp. pepper
  • 1 cup zucchini or fresh spinach, finely chopped
  • ¼ cup roasted red peppers, finely chopped (from a 12 oz jar)
  • 2 tbsp. red onion, finely chopped
  • 1 cup (4 oz.) Cheddar cheese, shredded

Instructions

1. Preheat oven to 350°F. Grease a muffin pan (or spray it with cooking spray) and set aside.

2. In a medium bowl, beat the eggs, milk, hot sauce (if using), salt and pepper until well combined. Stir in the zucchini or spinach, roasted red peppers, red onion and cheese. Divide the mixture evenly between the cups. (The cups will be close to full)

3. Bake for 20-22 minutes or until the eggs are completely set.

4. Allow to cool for 3-5 minutes in the pan. Carefully run a butter knife around the edge of each muffin cup to loosen for removal. Serve warm.

5. Note: These can be made ahead for a quick and easy breakfast or snack idea! Just pop them in the microwave to reheat them!
