When I feel really stressed, I often go into a baking frenzy. I will bake 10-15 things in a day without a second thought. It helps me take my mind off of whatever is bothering me and I often find it therapeutic to take my frustrations out on ingredients.

I don't think that I have mentioned that my mother-in-law was experiencing some chest pain a few weeks ago. I tried to convince Brian to just go get her from her house in California and take her to the hospital .... but she convinced him that she would be out here in Phoenix in a few days and she would go then. :/ I'm not one to want to mess around with things that might be super serious. When she finally went to the hospital, she was admitted - and ended up needing double bypass surgery on her heart. I'm happy to say that she made it through the surgery okay and she seems to be on the road to recovery, but it looks like she will be in rehab for awhile. She also has a long road ahead of her as far as some major lifestyle changes.

During her surgery day, while we were waiting for word on how she was doing, I baked. A lot. This Giant Peanut Butter Cookie with Chocolate Chunks is just one of many recipes I made that day. Luckily, I have plenty of volunteers to eat all of this food!

When I'm looking to bake quickly without heating up the entire kitchen, I turn to my Hamilton Beach 4-Slice Easy Reach Toaster Oven with Rolltop Door. You won't need to break out your big fancy mixer - or a hand mixer - for this Giant Peanut Butter Cookie with Chocolate Chunks recipe. You'll just need a mixing bowl, a rubber spatula or wooden spoon, and a few common ingredients! I'm trying to be better about making videos for y'all - and as you'll see below, I'm still learning! Get ready y'all, this cookie is as big as your hand!

Giant Peanut Butter Cookie with Chocolate Chunks

Prep Time: 5 minutes
Cook Time: 20 minutes
Yield: 1 giant cookie

Ingredients
  • 2 tbsp. butter, softened
  • 2 tbsp. granulated sugar
  • 2 tbsp. packed light brown sugar
  • 2 tbsp. beaten egg
  • 2 tbsp. creamy peanut butter
  • ½ tsp. vanilla extract
  • ½ cup all-purpose flour
  • ¼ tsp. baking soda
  • ¼ tsp. kosher salt
  • ½ cup chocolate chunks

Instructions

1. Preheat oven to 350°F. Line a small baking sheet with parchment paper and set aside.

2. In a large mixing bowl, cream together the butter and sugars until well combined. Add egg and vanilla, mixing until well combined. Stir in peanut butter. Add flour, baking soda and salt. Mix well. Add the chocolate chunks and mix until well combined.

3. Scoop dough onto prepared baking sheet and bake for 17-20 minutes, or until the edges begin to brown and the cookie is cooked through. Let cool on baking sheet for 10 minutes before transferring to cooling rack to cool completely.
