Are you a fan of hummus?! The very first time I tried hummus was when I went to Chicago for #LiveWell with the Beef Council in 2013. Yes .... it took me forever to try it!! The Beef Council sent us home with a few goodies, including a few snacks for our flight home. One of the snacks was hummus with various cut up veggies. (Side note - it was also the first time I tried jicama! Yes, I know, I need to get out more!)
My first thought when I tried it was that hummus was that it is awesome! Having never grown up eating it and not really being familiar with the ingredients, I filed it in my memory bank to make "some day" .... maybe you do that too? The problem with some day is that it is never today and often times, we forget about it. Am I right?! I've made a few variations - but I often forget about how easy and versatile hummus really can be!
My sister-in-law had some DELISH Spicy Avocado Hummus during our last visit and it reminded me that I really needed to make hummus for the blog! I think I might be the only food blogger who doesn't have a recipe for hummus on the blog?! That all changes today, friends! I'm sharing this amazing and simple Tropical Hummus! I've added pineapple, mango, shredded coconut and just a bit of Silk Coconutmilk to keep it creamy!
This Tropical Hummus is perfect for Meatless Monday - and with it being football season, it's the perfect snack for Monday night football too! Not only can plant-based diets be good for people and better for the planet, but they taste amazing too! So take the #MeatlessMondayNight challenge and spark real change. Adopting a more plant-based diet can start with making a change just one day a week – so why not start by sidelining meat during Monday Night Football games this season? You can do it!

Tropical Hummus
by Prep Time: 5 minutes
Cook Time: 0 minutes
Yield: 2 cups
Ingredients
- 1 can (15 oz.) garbanzo beans, rinsed and drained
- ½ cup fresh pineapple chunks
- ½ cup diced mango cubes
- ¼ cup shredded coconut
- ¼ cup tahini
- 2 cloves garlic, minced
- 1 lime, juiced
- 2 tbsp. Silk Coconutmilk
- Olive oil and/or shredded coconut for garnish (optional)
- Falafel chips, pita chips, tortilla chips or assorted veggies, for serving
Instructions
1. Place all hummus ingredients in a food processor. Cover and process until smooth.
2. Garnish with olive oil and/or shredded coconut before serving, if desired.
3. Serve with Falafel chips, pita chips, tortilla chips or assorted veggies.
