I hate to admit that I often feel overwhelmed this time of the year, and I know I'm not alone! Here's the thing, we love to entertain, but I will be the first to admit that I just wasn't full of ideas on what to serve this past weekend for a couple of friends who were coming for a visit. I'm just not feeling it lately. Holiday stress has really taken it's toll on me. I have a few important deadlines coming up, plus, Brian just lost his mom in November. Not to mention just normal life stuff ... It all kinda wears on you.
We were expecting a couple of friends over last weekend, and I honestly had no idea what to make ... I usually have a hard time narrowing my ideas down because I have so many! I turned to the internet for some inspiration ...
I found a website called Chef'd ... have you ever heard of it? It's a meal kit company that doesn't have subscriptions! Order what you want, when you want! I found myself scrolling through and clicking all kinds of dishes that sounded easy and delicious. They have meals that fit every lifestyle ... Don’t eat meat? Eating gluten-free? No problem! Chef’d has delicious meals for vegetarians and vegans, as well as many gluten-free options. It's also easy to filter all meals by clicking categories like Family Friendly, Gourmet, Quick and Easy, and Lighter Options. I saw the Beef Bourguignon with Mashed Potatoes and Herbed Green Beans and just knew that's what I needed to make for our friends! Comfort food. How could I resist that when we kinda could use the extra comfort in our life right about now?! This is easily a 5-star dish - and it's a dish that I will definitely be making again and again! Our guests loved it, we loved it! It was so good that I need to make it again soon!
I love that shipping is fast (I requested my order for two days from the time of ordering) and it showed up on time! I also love that everything was packaged together - I quickly knew what ingredients went with what dish. I even got a bonus recipe and ingredients for overnight oatmeal - that was a nice surprise!
I also want to mention that while I was scrolling through all of the meal ideas, I found a meal kit for Wasabi Pea Crusted Salmon with Soba Noodle Beet Salad and Asian Pesto. It sounded kinda interesting! Salmon is one of the only seafood or fish dishes that I can get Brian to eat so I thought it would be nice to surprise him with a nice dinner for two to give us a chance to reconnect a bit with all of the stuff going on in our lives.
Although Chef'd isn't something I would buy regularly, I would definitely use this service a few times during the year!
