I have been wanting to share this yummy Rainbow Fruit Salad with Honey Citrus Dressing for awhile now - and I am finally doing it today!! *happy dance* If you follow me on Instagram or Facebook, you may have already seen a sneak peek for this fruit salad! I have to tell you, although my kiddos are pretty good eaters, it's fun to change things up once in awhile, and what is more fun than a colorful bowl of yummy fruit and pancakes with sausage on a stick?!
After hearing so many stories from other moms, I have to say that I feel very blessed that all of my kiddos willingly eat an assortment of fruits and veggies. Getting them to "eat the rainbow" is usually pretty easy. My husband, on the other hand .... eh, yeah. That's another story! I'm still working on that one! ;)
Like many of you, things are starting to get crazy in the Love Bakes Good Cakes house. Summer is coming to a close and we're trying to get the last little bit of fun in before it's back to the books! Some of the schools here in the Phoenix area are starting back to school next week!! Can you believe that?! Since we homeschool, we won't be starting that early! Oh, no! We'll squeeze out the last few weeks of summer before we have to give in and get back to the grind! With all of this talk of back-to-school, I can't help but think of how fast the weeks of summer have slipped by! Seriously, where did they go?!
As much as I haven't wanted to, I finally got the curriculum ordered for next school year. I even bought Abby a few workbooks so she can "do school" too! With curriculum comes the back to school supplies. Am I the only person who hates back-to-school shopping?! Ugh.
A few weeks ago, I was doing my regular grocery shopping and picking up a few last-minute back-to-school items at Walmart. Thank goodness for one stop shopping! I should note that this fruit salad works with almost any kind of fruit your family likes! If you prefer raspberries over blueberries, by all means switch them out! If clementines are on sale that week, use them in place of oranges! Your kiddos only eat green grapes? Not a problem! Maybe you prefer peaches over apples - that's okay too! This recipe is great in the fact that it is easy to customize and it still turns out delicious!

Rainbow Fruit Salad with Honey Citrus Dressing
by Prep Time: 15 minutes
Cook Time: 0 minutes
Yield: 12-15 servings
Ingredients
- 1 red apple, cored and chopped
- 1 green apple, cored and chopped
- 1 lb. fresh strawberries, hulled and quartered
- 1 small pineapple, outer skin and core removed, fruit cut into pieces
- 1 pint fresh blueberries
- 2 cups red grapes, halved
- 4 kiwi fruit, peeled and chopped
- 3 oranges, peeled and segmented
- 2 firm, ripe bananas, peeled and chopped
- ¼ cup honey
- ¼ cup fresh squeezed lemon juice
- ¼ cup fresh squeezed orange juice
- Zest of 2 limes (2 tsp.)
Instructions
1. Place all of the fruit in a large bowl. Set aside.
2. In a food processor, blender or medium bowl with a whisk, combine all of the dressing ingredients until well combined. Pour the dressing over the fruit and stir to coat.
3. Serve immediately or refrigerate.
