Okay...I know that you're going to think this is really crazy....but, tonight when I was picking up Turkey Hill Diet Iced Tea (which I am addicted to, btw) at Fresh Go, I was thinking about making some kind of cupcake to make that would be like an experiment. I was in the cake mix aisle and then I spotted pancake mixes...I was checking out the recipes on the box and thought WOW this might be fun to try out as a cupcake. Hmmmm...I didn't want to use a mix, though. So I picked up some Bisquick (probably the same thing, huh?). When I got home I made the pancake recipe for "lighter pancakes" that was on the box. Got out my cupcake pan. Put the batter in there and stuck them in the oven at 350 for about 12 minutes. It worked!
This is what they looked like right out of the oven. Pretty much like cupcakes! But, what about the taste? They even taste like pancakes...not right away...but just when you start you swallow a bite you get the pancake flavor. So, next I made some maple frosting out of confectioner's sugar, a little milk, maple sryup, maple flavoring, and a little vanilla. I mixed it all together and then put it in the microwave to melt it. I dipped each cupcake (the top of the cupcake) into the melted stuff and when it cooled, it hardened like maple candy. Awesome! My next thought was to put some bacon bits on top of it, but I held myself back from doing it. One cool thing about this is that they are very easy to make and doesn't everyone have Bisquick on hand? I, however, just thought that it was funny to make a cupcake out of a pancake!
