
I've noticed that school supply lists are everywhere ..... Can you believe that some of the schools here in the Phoenix area start back to school the first week of August? That's like, next week, y'all!! Man .... where did summer go? Although schools in your area might not be starting back as early as we do here, I wanted to share the recipe for these PB Apple Chicken Salad Wraps. They are a great lunch idea - and it's a great way to change things up a bit!
Let's be honest ... it's too easy to fall into a lunch rut. It happens to me all of the time!! I'm also really bad at just grabbing whatever is easy and not really giving too much thought about it giving me what I need to tide me over until dinner. I've been trying to make a more conscious effort of what I choose to eat for lunch. Which is why I have been stuck on chicken salad lately!
As you may remember, I told y'all in my Lighter Chicken Salad Sandwich post that I have been on a chicken salad kick lately and that continues today. I'm sharing another yummy chicken salad recipe with you! I love how versatile chicken salad can be in flavor and how it's served. On lettuce, on bread, in wraps, with crackers ... you get the idea. I'm a big fan of wraps because they're easy to eat while I work.

You might think this recipe has olives in it with a quick glance at the picture - but those are actually grapes!! My local store had some Midnight Beauty Grapes in stock - and I love picking them up when I find them! You can use whatever grapes your family has on hand or prefers.
Another note - while I usually use regular creamy peanut butter for this recipe, I picked up some JIF Peanut Butter and Naturally Flavored Cinnamon Spread and decided to give it a go in this recipe. The touch of cinnamon paired nicely with the chicken salad and I think I'll plan on using it from time to time in this family-favorite recipe!


- 1½ cup cooked chicken, shredded
- 1 cup diced apple
- 1 cup grapes, halved or quartered
- 2 tbsp. peanut butter (I used JIF Peanut Butter and Naturally Flavored Cinnamon Spread)
- 2 tbsp. plain Greek yogurt
- 2 tbsp. honey
- Pinch salt
- 4 tortillas or flat wraps
- 4 lettuce leaves, rinsed and dried
