We love burritos at our house. Probably more than I care to admit! As one of our goals for the new year is to eat a little better, we decided to make burritos in a healthier way. All of our favorite ingredients are there but without wrapping it all up in a tortilla, we piled it all into a bowl. And it was delicious!

Burrito Bowls with Light Tomatillo Dressing

makes 4-6 servings
Ingredients
1 1/2 c. brown rice, uncooked
2 c. romaine lettuce, chopped
1 (15.25 oz) can black beans
1 (15.25 oz) can sweet whole kernel corn
1 large tomato, diced
Light Tomatillo Dressing
2 c. greek yogurt
1/4 bunch cilantro, cleaned and pulled from stems
1 tomatillo, cut into chunks and paper skin removed
1/4 tsp. minced garlic
1/2 jalapeno, seeds removed
juice of 1 lime
1/2 tsp. salt
1 green onion stem (all of the green part)
Directions
Cook rice according to package directions. Place rice in bowls and top with lettuce, beans, corn, and tomato.
Prepare dressing by combining all ingredients in a blender. Drizzle over burrito bowls and serve.
